Ingredients
Rice- Brown, Basmati, whatever you have in the cupboard; Tapioca Flour; Buckwheat/Flour; Quinoa/Flour; Pepitas, Sunflowers or both; Xanthan/Guar Gum; Dried Yeast; Sea Salt; Coconut Sugar; Water; Rice Bran or Grapeseed Oil; Apple Cider Vinegar; Egg
- 160 g brown and basmati rice
- 100 g tapioca starch
- 50 g Buckwheat grain or flour
- 80 g Quinoa or flour
- 55 g pepitas or sunflower seeds., a mixture of raw seeds can be used
- 1 teaspoon xanthan gum, Xanthan is preferable for bread but guar is fine
- 1 sachet dried yeast
- 1 heaped teaspoon sea salt (fine grain)
- 20 g coconut or rapadura sugar
- 400 g Luke Warm Water
- 30 g rice bran or grapeseed oil
- 20 g apple cider vinegar
- 1 egg. large, large

1. Place rice and any other whole items such as buckwheat (except seeds) in TM and mill till flour consistency.
2. Add the rest of the ingredients to TM and mix on speed 4-5 for 15 seconds.
3. "Dough mode" for 1.5 minutes "Closed lid"
4. Place in a lined bread tin
5. Place tin in a cold conventional oven on 180 degrees for 50 - 60 minutes .
VARIATIONS
Bit more gourmet: Make some Nut milk (Half Almond & Hazelnut is yummy) & add leftover meal and use half nut milk and water.
Vegan or Egg Allergy:1 egg equals: 1 tablespoon of chia soaked in 3 tablespoons of water. Let sit for 15minutes before adding to recipes
Yeast Allergy: Add 3 teaspoons Gluten Free Baking powder and juice of half a lemon as activator

Tip
Note: This is a dense bread and it is better to cook it slower and a bit longer to get the best result.

Where it says 'satchel' of yeast -what is that equivalent to in grams or teaspoons please?
How fine does Thermomix grind rice? I have been recommended to use Authentic Foods Superfine White rice flour only. Will grinding them longer in the thermomix make it superfine?
This was pretty easy thank you. I've been trying serval gf breads lately. It didn't raise much, I might prove it for an hour first next time. Also needed ten minutes longer in the oven, covering the top with a lid for the last 20minutes
The consistency is really nice and soft. Worked well for French Toast. Otherwise I thought it was very bland tasting. Would add more flavor next time, although, not sure if just adding more salt and honey would do the trick?

160g total rice being a combination of rice is what I use - brown, basmati, arborio, red. What ever I have in my cupboard. I also use Tapioca and mill this.

I love this GF bread Tess - only one I ever make and always gets great comments even from non GF people. I love making as mini loaves also - approx 20 minutes to cook so great when need it in a hurry or just want some rolls also.
