Ingredients

Dough

  • 280 g water
  • 2 level teaspoons Yeast
  • 150 g wholemeal spelt flour
  • 400 g white spelt flour
  • 2 level teaspoon salt
  • 2 level teaspoon bread improver
  • 1 heaped teaspoon rice malt syup
  • 20 g Grapeseed Oil or Macadamia oil

Recipe's preparation

  1. Place water into bowl and heat for 2 min,  37 degrees,  speed 1.

     

    Add yeast and mix 3 seconds, speed 2.

     

    Add remaining ingredients in the order listed.

     

    Switch to dough mode and need for 4 minutes.

    Whiles needing,  oil a bowl for the dough to rise in. 

    Once needing is finished,  place in oiled bowl, cover with cling wrap and leave to double in size.

    I place mine in a warm window sill and it rises beautifully.      

     Thins may take an hour or more depending on temperature.  

    Once dough has doubled, place on thermo mat and knock back lightly.  

    Roll into a thick sausage shape and then divide into 6 or 7 pieces.  

    Roll into a nice shape and place a few cm apart on thermo mat.  

    Cover again and pop back in sun to rise again until almost doubled.  They should now be touching.

    Once happy with the size, place the rolls into cool oven, and bake at 200 degrees for 25 - 30 minutes.

    To check if ready, tap and if hollow sounding, they're done. 

    Place on wire cooling rack to cool.

Tip

As stated,  i rise the dough in a window sill and it rises really well , even on  coolish day. 

If struggling to get a warm enough spot, heat your oven for 10 or 15 mins, turn off and place the dough in thermo matt inside. Will rise in the nice warm oven. 

 

If you like, you can use just 550 g of white spelt. Will not affect recipe at all.

    Very impressed with these. I have only just got my Thermomix so thought I'd give these rolls a go and they really are nice. Soft and yummy. I didn't use bread improver. Thank you for posting this recipe.
