Ingredients

CHEESECAKE

  • 500 g Full Cream Ricotta
  • 500 g cream cheese (room temperature)
  • 140 g caster sugar
  • 8 Eggs, Large

VARIATIONS

  • 1/2 cup raisins, soaked in Marsala for 15 mins, strain OR
  • 1 lemon zest, If you use this option, add it with sugar in step 2

Recipe's preparation

  1. Preheat oven to 160°C/140°C fan-forced.

    Line bottom and Lightly grease sides of a springform pan 

    Prepare the Variation (Cheesecake Flavor) of choice:

    1) Soak Raisins (if using this option)2) Mill raw sugar for 10s on Speed 9 (if making lemon cheesecake flavor - add lemon at this step and mill with sugar)

    3) Add Ricotta and Cream Cheese to the TM bowl and mix on Sp 4-5 for 1min (open lid and scrape down sides of bowl to make sure mixture is being incorporated nicely)

    4) Whith blades running on speed 4 add eggs (one at a time) through the lid

    5) (if using raisins option) Reverse Blades and on Sp 3 add raisins continue to mix for 5 seconds6) Pour into Springform Pan.

    7) Bake for 50-60 minutes or until golden (time depends on your oven) Turn off oven. Cool cheesecake in oven with door ajar.

     

    Refrigerate overnight.

    Hi @sempreGIOSorry I never received notification of your message on my post. I tried the recipe again last night and it worked. It definitely raises above the cake tin but wouldn't say it cooled down to 1cm.  That's very strange. Could it have needed more cooking time.  If it doesn't look golden, I keep it in over for a bit longer.

    Sorry to say this was a failer for me....in the oven it rose above and beyond the cake tin but as it cooled it flattened down to about 1cm high, taste was good but no one in my family wants to eat it......can you tell me where I went wrong!
