Brittle Mix
- 400 g almonds
- 35 g Flax seeds, (linseeds)
- 350 g dates, chopped and de seeded
- 8 bananas, chopped
- 250 g shredded coconut (sulphite free)

Place the almonds in the TM bowl and chop for 5 sec/speed 5. Scrape down and repeat. Set aside.
Grind the flaxseeds for 10 sec/speed 8.
Add the dates and banana and blend for 20 sec/speed 8.
Place the shredded coconut and almonds into the TM bowl and mix for 30 sec/"Counter-clockwise operation" /speed 3 with the aid of the spatula.
Spread the mix evenly on the solid dehydrator sheets and dry for 12 hours at 40'C.
Flip the brittle and leave on the open grid trays for another 12 hours.
Break into pieces and enjoy.

Tip
Eat sparingly as nuts are high in protein and fat. Pre-soaking the nuts removes the enzyme inhibitors and makes them easier to digest. If you are going to soak them then soak the almonds for 8-12 hours and the flax seed for only 1-2 hours then dehydrate until crunchy. If you want to shape your brittle do so when it is wet or just a little dehydrated and still pliable.
