Ingredients

Dough

  • 100 g macadamia nuts
  • 100 g cashew nuts
  • 50 g sultanas
  • 150 g Dates (pitted)
  • 1 teaspoon Vanilla Bean Paste
  • 2 tablespoons Desiccated Coconut
  • 3 tablespoons Cacau Nibs or Choc Bits

Extra Desiccated Coconut to coat

Recipe's preparation

    Caramel and Cacao Nib Balls
  1. Place cashews, macadamias, sultanas, dates, vanilla bean paste and coconut in Thermomix bowl. Speed 9 for 1-2mins (until it comes together)

  2. Add Cacao Nibs Counter-clockwise operation"Counter-clockwise operation"  Reverse speed 2-3 for 10secs

  3. Roll into balls and roll in extra coconut. Refridgerate until firm.

    Is there meant to be an amount for Cashew Nuts or can you just substitute cashews with Macadamias?Ingredients list doesn't have cashews, but instructions say to add cashews & Macadamias?Thanks

    MandaMac I'm sooo glad you liked them, thanks for trying them tmrc_emoticons.) I use raw cashews and macadamias but I also get a fair amount of oil from the nuts too... I do the same just discard it tmrc_emoticons.)

    These were really yum, thanks! Will definitely make them again! Do you use raw or roasted cashews? I used roasted, there was quite a bit of oil at the bottom of the bowl after I'd finished mixing but I just discarded this and they turned out great tmrc_emoticons.)
