Ingredients

Chia Pudding with raspberry coulis

Raspberry coulis

  • 2-3 sticks rhubarb, cut in 2cm pieces
  • 1 level tbsp freshly squeezed lemon juice
  • 1 cinnamon quill
  • 2 tablespoon Maple syrup
  • 125 gram fresh or frozen raspberries

Chia Pudding

  • 100 grams chia seeds
  • 400 grams almond milk (or milk of choice)
  • 1 tsp Vanilla Bean Paste
  • 2 tsp honey (optional extra)
  • to taste ground cinnamon

Assembly

  • 2 sprigs fresh mint leaves
  • 12 fresh raspberries for garnishing

Recipe's preparation

    Raspberry coulis (with rhubarb)
  1. Place coulis ingredients (except for the raspberries), into mixing bowl and cook for 10mins/100°C/Counter-clockwise operation"Counter-clockwise operation" /speed Gentle stir setting"Gentle stir setting" .

  2. Cook for a further 5-10mins/90°C/Counter-clockwise operation"Counter-clockwise operation" /speed Gentle stir setting"Gentle stir setting" , without measuring cup, until fruit is soft.

  3. Add raspberries and stir 4 sec/Counter-clockwise operation"Counter-clockwise operation" /speed Gentle stir setting"Gentle stir setting" . Remove cinnamon quill and discard. Transfer coulis into a sealable container and set aside to cool or transfer into refrigerator until ready to serve, Clean and dry mixing bowl.

  4. Chia Pudding
  5. Place all chia pudding ingredients into mixing bowl and mix 3 seconds/speed 5. Divide pudding between 4 serving glasses or small sealable jars and cover with plastic wrapor jar lids. Store in refrigerator for a minimum of 2 hoursor overnight, for the chia pudding to set.

  6. Assembly
  7. Prior to serving, top each glass jar with a few spoonfuls of compote, 2or3 fresh raspberries and a sprig of mint,(as a garnish)

Tip

This recipe can be a great quick and easy healthy breakfast option, spoon on coulis, just before serving. Your choice of milk will work too. Puddings will keep for about 24 hours under refrigeration and the Coulis will store up to 1 week, chilled.
