Ingredients

Choc-coconut Dessert

  • 250 g cream cheese, cold out of the fridge and quartered
  • 3 eggs, room temperature
  • 50 g Descicated coconut
  • 1 teaspoon coconut liquer, or flavoured liquer
  • 30 g caster sugar
  • 50 g full fat pouring cream (whipping cream)
  • 200 g Dark Chocolate Melts, or dark chocolate roughly chopped
  • 1 teaspoon vanilla extract

Recipe's preparation

  1. Add coconut to TM and mill on speed 9 for 10 sec or until it looks a little like white sugar.

  2. Add sugar and dark chocolate into the TM and grind on speed 8 for 20 secs. Scrape down sides of TM bowl.

  3. Cook at 70 degrees on speed 3 for 5 mins.

  4. Add cream cheese, cream , vanilla extract and coconut liquer and mix on speed 4 gradually increasing to speed 8 for 40 sec or until an almost smooth consistency.

  5. Insert butterfly and whip on speed 4 for 1 min then quickly add eggs one at a time through the hole in the top of the TM lid while on speed 4 for 3 minutes or until the thick and cream mousse like consistency.

  6. Serve mixture in a large bowl or individual small bowls or mini disposable icecream cups.

Tip

You can dust with a small amount of Vanilla Sugar or something similar to 'pretty up' if desired.
