Fondant

  • 25 g melted butter
  • cocoa powder, to coat ramekins
  • 100 g dark chocolate
  • 100 g Butter
  • 100 g caster sugar
  • 2 eggs
  • 2 egg yolks
  • 100 g plain flour

Recipe's preparation

  1. brush melted butter throughout ramekins and coat with cocoa powder. make sure you have a good coating of butter.

    Place in fridge until needed.

    Melt together Chocolate and butter (i do this in the microwave to save on washing my bowl, but you can always do in your bowl 2min/50deg/sp2)

    allow chocolate to cool while whipping eggs, yolks and sugar together Add Butterfly 4-5mins/sp3.5 or until its thick and creamy.

    add flour and mix 10sec/sp3

    with blades spinning on sp3, slowly pour the chocoate mixture through the lid and mix until all combined.

    pour mixture into prepared ramekins

    place in fridge for at least 20mins, up to over night.

    Bake at 200deg (fan forced) for approx 10-15mins depending on your oven and size of your ramekins.

     

    Result- you want a cake like and well set top and sides with a soft/jiggly centre.

    Once removed from oven allow to sit for a 1 min before carefully! turning out onto your plate.

Tip

Fondants are very hit and miss.. thee may take a few takes, before perfection.

however even the misses still taste good tmrc_emoticons.)

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
