Ingredients

Base

  • 1 cup of nuts, Grind up Pecans, Cashews, Hazels, Macadamia Nuts
  • 4 medjool dates (pitted)
  • 1/2 Cup of Cocoa Powder
  • 1 pinch sea salt
  • 1 tsp vanilla

Filling

  • 2 Cups Cashews, Soaked for at least 1 hour
  • 1/2 Cup liquid Coconut Oil
  • 1/3 Cup Argave Syrup, Can use Rice Syrup, Maple Syrup
  • 1/2 Cup water
  • 1 tsp Vanilla Bean Paste, or 2 Tsp Vanilla Essence
  • 3/4 Cup Cocoa Powder

Recipe's preparation

    Base
  1. Place all base ingredients in TM bowl and blend 30 - 40 Sec / Speed 6

     

  2. Press into base of greased 22cm round springform cake tin and place in Freezer while you make the filling.

  3. Filling
  4. Place all Filling ingredients into TM bowl and blend 1 Min / Speed 7 - until smooth and creamy.

  5. Pour into Base, cover with gladwrap and return to freezer.  Remove from freezer 20 min before eating and it will soften back to a creamy texture.  Always store in the Freezer.

    I only had macadamia nuts for the centre, which I soaked for about 30 mins.  I found the mix a bit grainy so I added 1 avocado, which helped a little to make is smoother.

    So made this and I can't believe how the texture of the cashew filling actually resembles a cheesecake! Tastes pretty good too. Quite an easy recipe that you can make ahead. Used one teaspoon of vanilla extract....not sure if I should've used two and I might add a pinch of salt to the filling next time to further enhance the chocolate favour.

    Hi! Would like to make this today and have cashews soaking. In regards to the filling, it says to use vanilla bean paste or vanilla essence of which I have neither....so can I use vanilla extract or vanillin sugar instead and how much?
