Ingredients

Brownie

  • 130 g walnuts (for gluten free) or oats, (preferably organic)
  • 130 g medjool dates, (about 13 dates)
  • 1 1/3 tbsp cacao powder, (preferably organic)
  • 1 tsp vanilla extract, (optional)

Ice cream

  • 3 Frozen Bananas, each cut into about 6 pieces before being frozen

Chocolate coating

  • 130 g coconut oil
  • 55 g cacao powder, (preferably organic)
  • 1 1/2 tbsp maple syrup or honey, (organic)

  • 130 g walnuts or oats, preferably organic
  • 130 g medjool dates, about 13 dates
  • 1 1/3 tbsp cacao powder, prerably organic
  • 1 tsp vanilla extract, optional

  • 3 Frozen Bananas, each cut into about 6 pieces before being frozen

  • 130 g coconut oil
  • 55 g cacao powder, preferably organic
  • 1 1/2 tbsp maple syrup or honey, organic

Recipe's preparation

  1. Brownie - bottom layer


    Closed lidTurbo walnuts (or oats) 3 times briefly.


    Add dates, cacao & vanilla extract. Blend 15 sec on speed 8.


    Press half of mixture into a small baking paper lined pan. This is the bottom half of 'sandwich'.


    Refrigerate the other half of the brownie mixture until the banana layer is made and frozen. You can pre-prepare second brownie layer on another piece of baking paper if you wish and keep in fridge.


     

  2. Ice cream


    Blend bananas 30 sec on speed 9.


    Open lid and push down banana from sides of bowl.


    Blend another 20 sec on speed 6 till mix becomes smooth and creamy.


    Spread onto bottom brownie layer, then put in freezer till solid (a few hours).


     

  3. Brownie - top layer


    Press remaining half of brownie mix on top of frozen banana layer.


    Put back in freezer till solid (an hour or two).


     

  4. Chocolate coating


    Mix ingredients for 2-3 mins at 37 degrees C on speed 1-2 till all coconut oil is melted and mix is smooth.


    Pour into a large mug or a 1 cup measuring cup.


    Take out frozen brownie/banana sandwich from freezer and cut into cubes.


    Dip cubes into melted chocolate.


    Place coated pieces on fresh baking paper on a larger tray.


    Put back in freezer till chocolate hardens. Serve when set.


     

Tip

Preparation time is under an hour but also allow extra time for the banana layer to freeze (few hours) and for the second brownie layer to freeze (1-2 hours).

This recipe is gluten free if using the walnuts option

    When I first saw picture today I didn't bother to look at recipe as it looked a little bit naughty.  Just happened to read walnuts bit on home page and popped in to read more. 

    Can't wait to try this....all the ingredients are so natural and healthy. Thanks so much.
