  • 1 mini Christmas Pudding, cut into quarters
  • 150 g raw sugar
  • 2 egg yolks
  • 600 g whipping cream
  • 1 tsp vanilla extract
  • 1 pinch of salt

Recipe's preparation

    Christmas Pudding Ice Cream
  1. Place sugar into bowl and mill 5 seconds/speed 9

  2. Add mini Christmas pudding.  Mix 10 seconds/speed 5.

  3. Add all remaining ingredients. Mix 5 seconds/speed 3

  4. Cook for 6 minutes/80 degrees/speed 4

  5. Place mixture into a container and cover.  Place into freezer 3-4 hours until firm but not frozen.

  6. Remove from freezer, cut into small pieces and place into Thermomix bowl. Blend 20 seconds/speed 9. Then again for 10 seconds/speed 4.

  7. Pour into a freezable container and return to the freezer for another 2-4 hours prior to serving.

Tip

Serve with warm brandy custard and cream.

Optional: Add an extra mini Christmas pudding to your batch if you prefer a stronger flavour.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     I love love love this ice cream.  It will now be a Christmas Eve tradition in our house.  So easy quick and amazingly declicious.  I LOVED IT!!
