Crunchy Rainbow Salad

  • 200 g Chinese cabbage
  • 1 carrot
  • 1 green apple, cored & quartered
  • 1/2 red capsicum
  • 1/2 yellow capsicum
  • 1/4 red onion
  • 1 spring onion
  • 15 g sesame oil
  • 60 g white vinegar
  • 75 g raw sugar
  • corriander leaves
  • 50 g Roasted almonds, or pinenuts
  • 50-100 g Fried crunchy noodles

Recipe's preparation

    Crunchy Rainbow Salad
  1. Place sugar in bowl and mill 10 seconds/speed 10

  2. Place remainder of ingredients into the bowl except the fried noodles.

  3. Mix 3 seconds/speed 4

    Repeat if necessry: 2 seconds/speed 4

  4. Serve immediately with crunchy noodles sprinkled on top.

Tip

Roasted almonds and pinenuts can be left out if you require a "nut free" salad. 

Add shredded chicken for a more substantial salad.

Serving Suggestion:  Serve in lettuce cups.

    Bizzare thing is that I'm not a fan of most of the ingredients on their own but I just LOVE this salad !

    Very easy and tasty with some tweaking! Found it overly sweet and needing salt. When I made it the second time, I used 20g of sugar instead of 75g, added 3 red chillies and a few generous dashes of soy sauce. Also had to chop/hand mix/chop repeatedly quite a few times. Had it in a wrap with some chicken- yum!

    A little mild on the flavour, and we had a bit of trouble chopping ingredients consistently - next time, more sauce, and more mixing between bursts of chopping!
