Ingredients

Base

  • 70 grams Shredded coconut
  • 160 grams coconut cream
  • 50 grams coconut oil
  • 5 grams vanilla bean extract

Topping

  • 100 grams Soft Pitted Dates
  • 25 grams raw cacao powder
  • 30 grams coconut oil
  • 5 grams Vanilla Bean Paste

Recipe's preparation

    Cold Coconut Choc Bites
  1. BASE

    1. Combine all ingredients in mixing bowl and mix

        10 sec / speed 3 Counter-clockwise operation"Counter-clockwise operation"

    2. Scrape down sides of bowl and mix again

        10 sec / speed 3 Counter-clockwise operation"Counter-clockwise operation"

    3. Spoon into mini patty papers and flatten down with spoon

    TOPPING

    1. Combine all ingredients into a clean bowl and mix

         5 sec / speed 8

    2. Scrape down sides and repeat

        5 sec / speed 8

    3. Spoon out and spread over the top of each coconut base .

    4. Place in freezer for 30 to 45 mins until hard . Remove 10 minutes

       before eating .

Tip

These are very rich so you only need bite size mini patty papers.

    These were a real hit in my house!  I would leave them at out least 10 mins before eating as they are very hard when cold.  A berry on top is yum too!
