Ingredients

Loukoumades

  • 250 grams lukewarm water
  • 250 grams lukewarm milk
  • 460 grams plain flour
  • 15 grams dry yeast
  • 2 level tablespoons sugar
  • 4 tablespoons olive oil
  • 1 teaspoon salt

garnish

  • honey, 1 1/2 cups
  • cinnamon sugar
  • 150 grams roughly chopped walnuts

Recipe's preparation

    Craigs Greek Style Loukoumades
  1. Chop walnuts, 5 SECS / SP 4. Set aside.

  2. In a clean bowl, add warm water and yeast.

    Stir, 5 SECS /SP2. Wait for approx 5 minutes until yeast has completely dissolved.

  3. Add milk, flour, sugar, salt and olive oil, 

    Mix 90 SECS / SP 5.5

  4. Transfer dough mix to your thermoserver or another big bowl, cover with cling wrap, and let dough rest in a WARM place for an hour to rise. Dont stir the dough before you spoon it out. Its full of air and very aerated and this is what helps make them fluffy at the end.

  5. In a medium frypan, place enough vegetable oil or macadamia oil to deep fry the Loukamades. Heat oil to a high heat until it starts to bubbles. Test oil temp by placing a tiny bit of the dough in, if it sizzles, its ready !

  6. Wet a tablespoon in a bowl of water, spoon out a spoon full of dough, and place it neatly into the oil.

  7. Repeat the procedure, dipping your spoon each time you get a new ball of dough. Dont overfill pan, fry them in batches. Use a large slotted metal spoon/flipper and turn onto all sides untill golden brown.

  8. When each batch is done, remove and place on paper towel to drain.

  9. When all Loukoumades are done, drizzle with heated honey ( I warmed mine in microwave, just quicker and easier ), and sprinkle with cinnamon and chopped nuts.

Tip

You can also serve these Loukoumades with a chocolate dipping sauce.

    We've made these twice now in a couple of weeks! half a batch makes heap, but we did have success with leaving the mixture in the fridge overnight and then made more the next day.

    We've also fried them off in advance and then warmed them up in the Airfryer and they are fantastic!
