- 1250 grams Dark Couverture Chocolate ~ 55% cocoa

1. Place cream in bowl run Thermomix on temperature Varoma, time 6 minutes, speed 1.
2. Open lid, add chocolate. Close lid. Run thermomix on no temperature, slow speed for about 20 seconds then slowly increase speed to 9 (over the course of 60 seconds) till ganache is emulsified and no lumpy bits are visible.
3. Pour ganache out into container with a lid and let rest in room temperature till firms up to the consistancy of peanut butter. Then it is ready to use to ganache a cake that will be covered in fondant.
