Ingredients

Crust

  • 200 g raw or activated cashews or almonds
  • 100 g Desiccated or shredded Coconut
  • 180 g medjool dates or pitted dates (see Tips)
  • 2 tbsp coconut oil, melted
  • 0.5 tsp fine sea salt

Filling

  • 800 g coconut cream
  • 170 g medjool dates or pitted dates
  • 2 tsp ground cardamom, plus extra 0.25 tsp to serve
  • 2 tsp Gelatine powder
  • 0.5 tsp fine sea salt
  • 4 eggs
  • 1 tbsp coconut sugar (optional)

Recipe's preparation

    Crust
  1. Line the base and sides of a round springform tin (20 cm) with baking paper and set aside.
  2. Place all crust ingredients into mixing bowl and mix 40 sec/speed 8. Transfer into prepared tin and press into the base and sides of tin, rising 5cm up the sides. Place into refrigerator or freezer.
  3. Filling
  4. Place coconut cream, dates, cardamom, gelatine powder, salt and eggs into mixing bowl and mix 30 sec/speed 10, then cook 10 min/80°C/speed 4. Set aside to cool for 30 minutes with lid off.
  5. Blend 15 sec/speed 4. Transfer filling into crust and place into refrigerator overnight to set. Mix together coconut sugar (optional) and extra cardamom and sprinkle over tart. Slice tart and serve cold.

Tip

If using pitted dates instead of medjool dates in the crust, add an extra tablespoon of coconut oil as the dates are drier than medjool dates.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
