Ingredients
Caramel
- 1/2 cup sugar
Custard
- 2 cups soy milk
- 1 tsp agar agar powder
- 1/2 cup extra firm silken tofu
- 1 1/2 tbsp sugar
- 1 tbsp vanilla extract
- 1 pinch salt

I'm cooking this todayRecipe's preparation
1. Have 6 ramekins ready (I used teacups)
2. Pour soy milk into TM bowl and sprinkle agar agar powder on the surface. leave to soak for 10-15 min
Put the sugar into a small saucepan over low-medium heat and stir until melted and golden. Divide amongst ramekins
1.After the soy milk and agar agar have been sitting for 10-15 min, turn TM to 5 min, 98 deg, speed 2 to gently boil mixture. At the end of time, check to see the agar agar has completely dissolved, if not, cook in further 1 min increments, checking after each increment to see if dissolved (5 min was about right for me)
2. Add tofu, vanilla, sugar and salt into TM bowl. Blitz for 10s, speed 8 and continue with 5s increments at speed 8 until a very smooth consistency is achieved.
- Divide the custard amongst the 6 ramekins, pouring over the top of the caramel.
- Cover with plastic wrap and put in fridge for a min of 1 1/2 hrs (or until custard has set)
- To turn out, dip the bottom on the ramekins into hot water for 15s before turning out onto plate.

This recipe was adapted from vegan caramel flan from www.peta.org
it can be used to make 3 larger flans but it would need longer to set in the fridge
Some of the caramel turns to toffee at the bottom of the ramekin, but this can be cracked and added to the dish - yum!
