Ingredients

Easy strawberry baked cheesecake

  • 250 grams maria biscuits
  • 150 grams melted butter
  • 2 eggs
  • 1 egg yolk
  • 100 grams sugar
  • 500 grams cream cheese
  • juice of half a lemon
  • 2 tablespoons cornflour
  • 1/2 teaspoons salt
  • 100 grams thickened cream
  • Fresh strawberries
  • 250 grams Strawberry Jam

Recipe's preparation

  1. Pre-heat fan-forced oven to 180 degrees.

  2. Add Maria buiscuits and crush for 30 seconds, speed 9. Scrape down the sides of the bowl with the spatula

  3. Add in the melted butter, add MC and mix for 30 seconds, speed 6

  4. Line a springform tin with baking paper and spread the mixture evently on the bottom and press down firmly. Place the dish in the freezer to chill. Clean and dry mixing bowl.

  5. Filling: Add the eggs and sugar, add the MC and beat for 1 minute on speed 4.

  6. Add the cream cheese and with the MC on beat for 30 seconds, speed 5.

  7. Add the lemon juice, cornflour, salt and thickened cream and with the MC on blend for 30 seconds, speed 6.

  8. Pour the filling into chilled base and spread evenly. Pop in the pre-heated oven at 180 degrees for 30 minutes, then reduce the temperature to 160 degrees and bake for another 30 minutes.

  9. Top with home-made or store bought strawberry jam and decorate with fresh strawberries. Enjoy!
