Ingredients
Lamington Cake
- 6 Eggs (Large)
- 1 tbsp Pure Vanilla extract or vanilla bean paste
- 2 tbsp raw honey or rice malt syrup
- 50 grams Macadamia nut oil, or cold pressed coconut oil,butter or olive oil
- 70 grams Coconut Flour
- 2 teaspoons Gluten Free Baking Powder
- 150 g Fresh or frozen raspberries, to scatter
- 75 g shredded or desicated coconut
Chocolate Ganache
- 100 grams Good quality dark eating chocolate at least 70%cocoa
- 60 g coconut milk

Pre heat oven 160 C / 320 F
Place eggs, vanilla and honey into mixing bowl. Insert Butterfly whisk set to speed 4 for 10 minutes. Slowly pour the macadamia oil onto the lid to allow to drip down whilst the eggs are whipping.
Remove whisk add coconut flour and baking powder and mix on speed 4 for 6 secs.
Pour mixture into 22cm lined tin and sprinkle raspberries on top.
Bake for 30-35 mins until cooked and then allow to cool for at least 30 mins before lifting from the tin.
Break up chocolate and chop 5 secs,speed 7 set aside.
Pour coconut milk or water into the bowl speed 2, 100 degrees for 4 mins. Add chocolate and stir speed 2, for 2mins.
Spread each lamington with chocolate ganache with a knife and then roll in coconut place on tray lined with baking paper to set.
