  • 4 eggs separated
  • 100 grams icing sugar
  • 120 grams lemon juice

Recipe's preparation

    Pastry
  1. Pre-heat oven to 200 and line pie dish with pastry, prick bottom of pastry with a fork.  Bake for 10 minutes until golden. remove from oven and cool.

  2. Pie Preparation

     

    Mix egg yolks, condensed milk and lemon juice using butterfly for 1 minute at speed 4.

    Pour into cooled pie base.

    Wash and dry bowl thoroughly.

  3. Meringue

    Using butterfly add egg whites to bowl.  Beat with MC in place for 3-5 minutes at 50 degrees on speed 4 until still peaks form.

     

    Add icing sugar, 1 teaspoon at a time through hole in lid with blades rotating at speed 3.  Take at least 2 minutes to do this.

     

    Spread over top of lemon filling.

     

    Bake at 160 degrees for 25 minutes, cool pie in oven, refrigerate and enjoy.
