Ingredients
Sorbet
- 4 Kaffir lime leaves
- 150 g raw or rapadura sugar
- 1 tin coconut cream
- 400 g Frozen Berries
- 550 g ice cubes, (500 - 600g), divided into two portions

Place leaves and sugar into mixing bowl and mill together 10 sec/speed 9.
Add coconut cream and berries with half the ice and blend 10 - 15 sec/speed 9.
Add remaining ice and combine for 1 min/speed 9 or until blended and smooth, using spatula to assist. Serve immediately.

Tip
Recipe will make around 2L of sorbet. Try changing the berries for a different taste every time

This is one of the best tasting sorbets I've made. The flavour combines perfectly. I only added 180g of coconut milk which was perfect for us and I didn't have enough ice but th consistency was fine,
Yummo! Delicious, thanks. I can't comment on kaffir lime leaves as I was just looking for a berry sorbet and didn't have any on hand so left out. I used 100g rapadura and it was plenty sweet enough for us. Used 400ml tin coconut cream and strawberries & blueberries and it was divine! We'll stick with the larger tin coconut cream as we love the taste & like the creaminess.

I made this with frozen cherries and 180g coconut cream (left out the lime leaves) and it was AMAZING! I served some at a gathering at my house and it was a huge success.
I made this without the lime leaves as I didn't have any but it was still absolutely amazing!!!
