Ingredients
- Zest and juice of 2 lemon
- Zest and juice of 2 orange
- 300 g fruit mince or pear mince, from this book
- 200 g whole mixed nuts, of choice
- 60 g brandy (optional)
- 80 g unsalted butter
- 60 g Dark Brown Sugar
- 50 g treacle
- 3 eggs
- 100 g self-raising flour
- 1 tsp ground cinnamon
- 1 tsp ground nutmeg
- 1 tsp ground ginger
- 1/4 tsp ground cloves
- 1/4 tsp ground cardamom
- 200 g dark chocolate chips
- 1000 g Boiling water

Place zest into mixing bowl and finely chop10 sec/speed 7.
2. Add juice, fruit mince, nuts and brandy and stir 2 min/70ºC/Reverse/speed 1. Set aside, cover and leave overnight.
3. Place butter, sugar and treacle into mixing bowl and beat 30 sec/speed 4 or until light and fluffy, scrape down sides of bowl if necessary.4. Add eggs, flour and spices and mix 20 sec/speed 5 and scrape down sides of bowl.5. Add chocolate and reserved brandy fruit mixture and mix for 10 sec/Reverse/speed 4.
6. Spoon into dariole or silcone cupcake moulds and place into Varoma dish and onto Varoma tray (depending on the size of your moulds). Place water into TM bowl, place Varoma into position and steam 40-45 min/Varoma/speed 2.
7. To serve, remove puddings from moulds and serve with cream, ice-cream, custard or Brandy Cream Sauce from Festive Flavour.
Tip
This should make around 18 little puddings so several steaming sessions may be necessary.
These puddings will freeze well and can be thawed and reheated in the Varoma for around 15 min/Varoma/speed 2.

These were great. I made them in silicone cake mou;ds. I found they steam better in my three tier steamer though. Easy to cook on the day.
