  • 120 g unsalted butter
  • 200 g sweetened condensed milk
  • 180 g fruit puff candy
  • Coconut shredded or desiccated

Recipe's preparation

  1. Place biscuits into mixing bowl and blend 20 sec/speed 8. Set aside.


    Place condensed milk and butter into mixing bowl and mix 1½ min/100°C/speed 3 until combined.


     


    Add biscuits and candy and blend immediately 5 sec/speed 7. Take care not to over mix.


     


    Turn out onto a sheet of plastic wrap and mould into a log shape before coating with coconut and sealing. Refrigerate for 4 hours or until set then slice into 1½ - 2 cm slices to serve.

Tip

 

In Australia, banana lollies are the closest in consistency and flavour to the New Zealand puff fruit candy. Use 180 g bananas instead of puff candy in this recipe.

Roll the log in biscuit crumbs, white chocolate flakes or mixed nuts instead of coconut.

    Great recipe but I just left coconut of it as family not keen on coconut.

    The original ( non thermomix) recipe I have for lolly cake calls for Eskimos. Pascal make them in Oz and you should be able to find them in Woollies. Just break them up. I also find the thermie makes the crumb too fine under my heavy hand.

    I found this to be almost too fine for a lolly cake. That could be my preference to a more coarse mixture however. I tried mixing on reverse the second time I made it but it didn't help. I really love the convenience of do it in the thermomix ratehr than by hand but hubby has requested I go back to the traditional way until I can work out how to make it not so fine & over chopped. That's just something I have to work on though, no offence intended to the person who listed this recipe tmrc_emoticons.)

    They are called fruit puffs and are not widely available in Australia. They are readily available in New Zealand. So you can get them through the various specialty lolly shops in Australia as well as the Kiwi shops in Perth & Qld etc. You can buy them online from these stores or in person.

    Clinkers have a completely different texture. They are not even close to the Kiwi fruit puffs. But good suggestion. Think the consistency of a banana lolly and your on the right track tmrc_emoticons.)
