Low Carb Purple Yam (Ube) Pudding
- 450 grams coconut cream
- 150 grams cream cheese
- 6 level tbsp Coconut Flour
- 5 grams gelatine, Powder
- 3 level tbsp Butter unsalted
- 1 level tbsp UBE extract, McCormicks
- 1 level tbsp Purple food colouring
- 2 level tbsp Sweetener of choice
- 100 grams Cheddar cheese, Grated
- 250 grams Thickened cream

- Add cheese to bowl and grate 6-10 seconds speed 7. Set aside.
1 Dissolve gelatine in 1 tsp water. Set aside.
2 Add all ingredients to the bowl except the cheese.
3 Blend 2 minutes
4 Add gelatine
5 Start Thicken "Thickening" 80degrees
6 Pour into serving dish
7 Sprinkle grated cheese over the pudding mix.
8 Refrigerate until time to serve
