Masala Chai Spiced Banana Bread

  • 125 g Butter
  • 150 g raw sugar
  • 300 g ripe bananas
  • 2 large eggs
  • 1/2 cup sour cream
  • 1 tsp vanilla extract
  • 3/4 tsp ground cardamom
  • 3/4 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 1/4 tsp ground allspice
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 225 g plain flour
  • 1 tsp bicarbonate of soda

Recipe's preparation

  1. Preheat oven to 180°C (160°C fan forced)

    Grease and line a loaf pan

    Add the wet ingredients to the Thermy jug mix 10 Seconds Speed 4.

    Add dry ingredients to the Thermy jug and mix 20-25 seconds.

    Pour the batter into your prepared loaf pan and bake for 60-70 minutes until golden brown and a skewer in the centre comes out clean.
    Rest in the pan for 30 minutes before turning out onto a cooling rack to cool completely.

    Serve sliced and spread with butter for afternoon tea or in a bowl with Banana or Vanilla Custard as a dessert.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     Followed recipe to the dot apart from substituting sour cream for Greek yoghurt. Absolutely gorgeous flavours. Really soft and moist. Will definitely be making again. Thank you 👍

    The flavour of this cake is unbeatable ! I weighed sour cream to be 125g and sliced raw pear and layered in middle and on top . Nothing to tweak , this is a winner in our home . Thank you
