Lemon Butter

  • 40 grams lemon juice
  • 110 grams caster sugar
  • 80 grams Butter
  • 2 eggs

Cheesecake Mixture

  • 1 package Philadelphia cream cheese (250g)
  • 1 Pkt Butternut Snap Biscuits

Recipe's preparation

    Mini Frozen Lemon Cheesecakes
  1. Use the lemon butter ingredients and make as per the Thermomix Everyday Cookbook.

     

    When finished, remove the butterfly and scrape down the bowl.

    Add cream cheese (cut up into about 8 pieces)

    Mix 5 secs / speed 3 just to bring it all together.

    Mix again 10 secs / speed 7.

     

    Place large paper patty cake liners into a muffin tray.

    Put one Butternut Snap Biscuit in the bottom of each liner.

    Spoon cheesecake mixture on top (about 2 dessert spoons each).

     

    Freeze for at least 30 minutes or until set.

Tip

Using light Philadelphia cream will make the mixture a little bit runny, but does not change the finished product or taste.

 

Remove from freezer 5-10 minutes before consuming.

 

If packing in the kids lunchbox, put in a sealed container, next to a freezer brick and add a spoon tmrc_emoticons.-)

    Made in slice tray for kicks 40th, a bit thin on the cheesecake side, if in tin again will double topping, or just make it the way written.

    These are soooooo good! A real hit! Will definitely be making again. I added some lemon zest as well as I love the citrus flavour. Everyone said the citrus flavour was perfect with the zest added

    These are brilliant and so easy with the lemon butter recipe in the chip already. Cooking 7My Kids love them.  I am going to try some variations and will let you know if I succeeded.

    I really love these! Have made them quite a few times. Sometimes I've made my own base, but they end up very hard. I also tried using premade biscuits. Both ways are yummy! Thanks!

    HI, not sure about adding less sugar or using a substitute, to be honest I've never tried it.  The lemon butter part of the recipe is straight from the EDC so I didn't bother trying it any other way.
