Ingredients
Cheesecake Base
- 80 gram Butter
- 300 gram Chocolate Biscuits, Oreo or Plain
Cheesecake Top
- 125 gram caster sugar
- 1 package Peppermint Crisp Bars
- 375 gram Phiadelphia cream cheese
- 1 tsp vanilla essence
- 250 gram cream
- 2.5 tsp gelatine, disolved in 1/4 cup boiling water
- 1 package Cadbury Aero block

Melt 80g butter (80 degrees, speed 1, 3 mins)
Add 300g oreo cookies (mix speed 6 10 seconds)
Press into a lined tin and refrigerate for 30 mins to set.
Without washing the bowl blitz a peppermint crisp bar (10 seconds speed 6) and set aside for topping
Blitz a Cadbury Mint Aero blocks (10 seconds, speed 6) and set aside
Blend 375g Philadelphia cream cheese, 1/2 cup caster sugar, 1 tsp vanilla essence (20 seconds, speed 6)
Add 1 cup cram and blend (10 seconds, speed 6)
Dissolve 3 tsp gelatin in 1/4 cup boliing water, then add and blend (10 seconds, speed 6)
Add the Aero and mix (10 seconds, speed 3)
Pour onto base and refrigerate for 3 hours or until set
Before serving, loosen the peppermint crisp crumbs and sprinkle over the top

Tip
I used the Philadelphia Cookies and Cream Slice recipe for inspiration. Last time I made it I didn't have oreo bisucits so I used the Coles brand Squiggle-top type biscuits. Any chocolate biscuit will do.
