Ingredients

Base

  • 125 grams Butter
  • 250 grams Plain Biscuits (nice, milk arrowroot, or make your own)

Filling

  • 500 grams cream cheese
  • 300 grams thickened cream
  • 100 grams castor sugar
  • 1 tablespoon lemon juice
  • 150 grams After dinner mints, Cut into little squares
  • 1 tablespoon gelatine, Dissolved in 1/3 cup of boiling water

Topping

  • 100 grams dark chocolate
  • 80 grams thickened cream
  • 1 teaspoon Peppermint Essence, Or adjust to your liking

Recipe's preparation

    Cheesecake base
  1. Melt butter, 3 min/50 deg/spd 5 

  2. Add biscuits and combine, 8 sec/spd 8, scrape down sides & combine again 3 sec/spd 8.

  3. Press into 23x23cm slab pan & refrigerate until firm.

  4. Cheesecake filling
  5. Combine cream cheese, cream, sugar and lemon juice, 20 sec/spd 5, scrape down sides & combine again, 15 sec/spd 5.

  6. Add after dinner mints and combine, 5 sec/Counter-clockwise operation"Counter-clockwise operation" /spd 5.

  7. Add gelatine mixture to bowl and combine, 5 sec/Counter-clockwise operation"Counter-clockwise operation" /spd 5.

    Pour mixture onto base and refrigerate.

  8. Cheesecake topping
  9. Place chocolate into mixing bowl and grate 10 sec/spd 8. Scrape down sides of bowl.

  10. Add cream and peppermint essence and melt, 3 min/50 deg/spd 3.  Pour ganache over filling and refrigerate until set.

  11. Once everything has set, slice using a knife dipped in hot water.

Tip

Replace gelatine powder with agar agar powder for a vegetarian version.

    Easy Chocolate Mint Cheesecake.Used plain chocolate biscuits for the base which contrasts nicely with the mint chocolate topping.Melted the chocolate on 50 C at speed 4.  (No speed mentioned in the recipe)Will be making this super easy no mess cheesecake many more times.   Will probably use a round springform pan next time - it will be easier to slice up.
