Ingredients
Peppermint Meringues (gluten-free, dairy-free)
- 2 egg whites
- 165 g caster sugar
- 1 pinches cream of tartar, (small pinch)
- 1 tbsp cornflour or arrowroot
- 0.5 tsp white vinegar
- 2 tsp Peppermint Extract
- 1 tbsp green food dye, (optional)
- sprinkles, optional

Preheat oven to 120 degrees.
(Ensure egg whites are at room temperature).
Line a baking tray with baking paper and set aside.
Insert butterfly whisk. Place 2 egg whites and a small pinch of cream of tartar into mixing bowl and whip 5min/37°C/speed 3.5.
Mix 5min/37°C/speed 3 slowly adding 165g icing sugar 1 spoon at a time through hole in mixing bowl lid until well combined.
Mix 30-40sec/speed 3, adding vinegar, peppermint essence, green food dye and cornflour gently though hole in the mixing bowl lid.
Remove the Thermomix bowl and spoon one teaspoon of the mixture on the prepared tray with 3cm in between to allow for spreading.
Then use the back of the spoon to gently pull out small peaks all over the meringues, creating a spiky effect resembling snowflakes.
Lightly sprinkle with GF/DF hundreds and thousands or sprinkles.
Place the meringues in the oven and immediately reduce the temp to 100°C.
Bake for 45 minutes, then turn off the oven and slightly open the door and allow the meringues to cool slowly (use the handle of a wooden spoon to keep door slightly ajar).
(To serve use a sieve to dust meringues with icing sugar.)

Tip
Do not attempt to pull out peaks once hot.
Ensure eggs are at room temp.
Thoroughly clean and dry bowl before whisking egg whites.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
