- 500 grams cooked pumpkin
- 125 grams brown sugar
- 3 teaspoons 'No Egg', mixed to a smooth paste
- 200 grams coconut cream
- 1/2 teaspoon Mixed spice (ground)
- 1/2 teaspoon cinnamon (ground)
- 1/2 teaspoon Ginger (ground)
Coconut Whipped Cream
- 200 grams chilled coconut cream, excess liquid drained
- vanilla essence, to taste
- icing sugar, to taste

Make pastry as per recipe in Everyday Cookbook. I substituted butter for Nuttelex, flour for spelt flour and added 50g icing sugar to sweeten. it may be necessary to add a little bit extra flour to get proper consistency.
Preheat oven to 180C
Roll into prepared flan tin and blind bake, take out to cool.
Put all pie filling ingredients in TM and blend for 20 sec on speed 5 or until a smooth consistency. Pour filling into prepared pastry tin.
Bake at 180C for 50 minutes until set.
Chill tin of coconut cream in fridge overnight, drain any excess liquid off if necessary.
Add coconut cream, vanilla essence and icing sugar in TM, butterfly inserted and beat speed 3.5 until thickened.
This won't be like dairy 'whipped cream' (not as thick), you may find you have to scrape down the bowl and rewhip. Also, try to have TM bowl chilled before whipping.
Serve pie warm or cold with coconut cream.

Awesome, glad you enjoyed it!! I'm thinking I might try this again with Vitasoy new Coconut milk in Tetra Pak - very creamy but not as coconutty.
Very nice filling with coconut flavour. We all loved it especially the kids who asked for second helping!
