Ingredients
Base
- 120 grams Desiccated Coconut
- 8 medjool dates
- 1 tablespoon raw cacao/cocoa/carob
- 1 teaspoon vanilla extract
Filling
- 215 grams raw cashews
- 40 grams Desiccated Coconut
- 1 pinch sea salt
- 50 grams Raw Honey
- 1/2 teaspoon peppermint extract (or a couple of drops of food grade pure peppermint essential oil)
Topping
- 40 grams Raw Honey
- 3 tablespoons raw cacao/cocoa/carob
- 80 grams coconut oil

Blend all base ingredients 20sec/speed 6, scrape down sides and blend again 10sec/speed 6 until mixture resembles crumbs and clumps together/feels sticky when you squeeze it between thumb and index finger
Press into lined loaf tin and pop into freezer whilst you make next layer
Blend cashews, salt and coconut 20sec/speed 6, scrape down sides and blend again 10-20 sec/speed 5-6 unitl smooth and creamy.
Add honey and peppermint extract and blend another 5-10sec/speed 4
Smooth on top of base layer and pop back into freezer
Blend cacao, coconut oil and honey 10 sec/speed 5, scrape down sides, blend again 10 sec/speed 5 or until smooth (depends on how solid oil is to start with) - not too long as the coconut oil with liquify too much and split from cacao.
Pour over top of cashew filling and freeze until set. Slice into small sqaure and keep in fridge or freezer. YUM!

Delicious! I've been searching for a whole rood treat that my kids will eat and this is it! I split the mix as one kid won't eat mint and so I just left the middle as honey flavour and it was a big hit! Also replaced top with 70% dark choc for ease and familiarity and it worked well.
by far a real favorite. I too added more dates and a little coconut oil to help keep bottom and middle layers together.
Really tasty. The bottom layer keeps separating from the middle layer when I do it though. Any suggestions of how to avoid this. Feel like I am missing something.
