Refreshing sorbet
- 100 g raw sugar
- 1 Peel of lime (or zest)
- 250 g Kiwifruit skin off
- 50 g frozen raspberries
- 1 Egg white (optional)
- 700 g ice cubes

1. Place sugar in mixing bowl with lime peel and mill 10sec/speed 9.
2. Peel outside of kiwifruit, cut into quarters and add to bowl.
3. Add egg white if desired to bowl, raspberries and 350g of the ice. Blend20secs/speed 10, gradually increasing speed from speed 1 to speed 10.
4. Add remaining ice and blend for a further 1min/speed 10. Depending on whether too hard for your liking, add a little bit of water for a smoother texture. If it gets stuck, use spatula to move the mixture around.
