Ingredients
Sticky Date Pudding
- 225 g dates, pitted
- 310 g Boiling water
- 1 tsp Bi-carb soda
- 165 g caster sugar
- 60 g Butter, softened
- 2 eggs
- 150 g SR flour
Butterscotch Sauce
- 300 g brown sugar
- 250 g unsalted butter
- 300 g thickened cream

- Preheat oven to 180C. Grease and line 19cm square tin.
- Add dates to bowl, chop 8 sec/speed 7.
Add boiling water and bi-carb soda and stir through 4 sec/ "Gentle stir setting" and stand for 5 minutes. Blend 5 sec/speed 5 (repeat if necessary), transfer to separate bowl.
Clean and dry bowl. - Add butter and sugar mix 10 sec/speed 4. Scrape down sides of mixing bowl with spatula, then mix for a 1 min/speed 4 or until light and fluffy (repeat if necessary).
- Add 1 egg, mix 2 sec/speed 4 scrape down sides of bowl, add remaining egg mix 2 sec/speed 4 scrape down sides of bowl.
- Add SR flour and reserved date mixture 5 sec/speed 4 scrape down bowl and mix 5 sec/speed 4.
- Pour into prepared pan.
Bake for 35-40 minutes in a moderate oven (180C) until golden, test with skewer. Stand cake for 10 minutes before turning out onto wire rack. - Serve cake topped with butterscotch sauce and ice cream / whipped cream.
- Place butter into TM bowl and cook on 2 min/80C/speed 1 until butter has melted.
- Add brown sugar and thickened cream, cook for a further 2 min/80C/speed 1 until combined.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
