Ingredients
Biscuit Base
- 80g Butter
- 150g plain sweet biscuits
- 1 tbsp ground ginger
Filling
- 50g Glacé ginger
- 300g Steamed Pumpkin pieces
- 150g brown sugar
- 500g cream cheese
- 2 tsp Cinammon
- 1 tsp ground ginger
- 1 tsp Nutmeg
- 5 lge eggs
Topping
- 400g sour cream
- 30g sugar
- 3 tsp lemon juice

Lightly grease and line (with baking paper) a 20cm spring form tin.
Place biscuits, butter and ground ginger into mixing bowl and finely crush 20 sec/speed 8.
Transfer to prepared tin and press firmly into base. Set aside in fridge until required.
Clean and dry mixing bowl. Place glace ginger into mixing bowl and roughley chop 5 sec/speed 5. Set aside.
Without cleaning bowl add pumpkin, cream cheese, cinnamon, ground ginger, nutmeg and brown sugar. Mix until smooth 30 sec/ speed 5.
With blades running at speed 4 add eggs one at a time mixing for 5 sec after each addition.
Add chopped glace ginger and mix 10 sec/speed 3.
Pour carefully over biscuit base and cover with 2 layers of cling film or use a 23cm side plate turned upside down. This is to stop any condensation dripping onto the cake. Clean mixing bowl.
Place all topping ingredients into mixing bowl and mix 6 sec/speed 3. Transfer to a small bowl and set aside until required.
Add 1500g of water into mixing bowl place lid on and Varoma"Closed lid" in place.
Carefully place cheese cake into Varoma and steam for 50 min/speed 2. When finished cheese cake should be just firm.
carefully take cling film off the tin and spread topping over hot cheese cake. Replace cling film of plate and steam"Closed lid" for another 15 min.
Once cooled slightly place in fridge until cold and serve. You can use extra glace ginger or nutmeg to garmish.
