Ingredients

Base

  • 150 g Chocolate Ripple Biscuits
  • 80 g Butter, room temp

Filling

  • 180 g sugar
  • 1 tsp cocoa powder, 70% cocoa
  • 1 tsp instant coffee granules
  • 200 g milk chocolate, broken into pieces
  • 500 g cream cheese
  • 2 eggs
  • 2 egg whites
  • 100 g thickened cream
  • 1 tsp vanilla extract

Recipe's preparation

    Base
  1. Add the biscuits to your bowl, break each in half to stop them catching in the blades.
    Pulse for 1 second x 3


  2. Add your butter and mix 10 secs/sp 6/reverse

  3. Press mix into a lined 20cm springform pan and pop into the
    fridge to set while you make the filling.

  4. Add coffee, chocolate, vanilla and sugar to the bowl
    Chop 6 sec/sp 8
    Cook 3min/60/sp 3

  5. Add half your cheese and mix together with your chocolate 1 min/40/sp4

  6. Chop up your remaining cheese and add to the bowl mix 30 sec/sp4

  7. Add eggs and cream and mix 30 sec/sp4

  8. Pour onto your base and cover your tin with foil making the, middle higher so the steam runs off rather than onto your cake. Put cake tin into varoma.

  9. Add 1500 grams water to the bowl, no need to wash.

  10. Pop varoma on top and steam cake 60min/varoma/sp 2.
    Cake is cooked when the centre only has a slight wobble left.

  11. Cool in fridge at least 6 hours preferably overnight before serving.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
