Ingredients

Plum Tray Bake

  • 250 grams cream cheese, at room temperature
  • 1 teaspoon vanilla extract OR vanilla paste
  • 55 grams caster sugar
  • 4 eggs
  • 175 grams softened unsalted butter
  • 175 grams brown sugar
  • 200 grams self-raising flour, sifted (if you are really fussy)
  • 400 grams plums, seed removed, sliced
  • 100 grams icing sugar, to dust

White chocolate Custard

  • 250 grams Milk
  • 300 grams thickened cream
  • 3 egg yolks
  • 30 grams cornflour
  • 100 grams white chocolate
  • 1/2 teaspoon vanilla paste (or extract)

Recipe's preparation

    Plum Bake Tray
  1. Pre heat oven to 180 degrees C.

    Grease and line a lamington tray (18cm x 28cm)

    Add cream cheese, vanilla, caster sugar and 1 egg to the TM bowl and beat for 40 seconds on speed 5-6 or until smooth. Remove mixture and set aside.

    In cleaned TM bowl (not essential), place butter, brown sugar, flour and remaining 3 eggs and beat for 1 minute on speed 5-6.

    Spread half the mixture into tray, followed by cream cheese mixture, swirling gently with spatula to combine. Top with half the plums. Top with remaining flour mixture and cream cheese and plums.

    Bake in oven for 45 minutes or until golden.

     

  2. White Chocolate Custard
  3. Place white chocolate, broken into pieces, in TM bowl. Grate on speed 8 for 5-10 seconds.

    Add milk, cream, egg yolks and vanilla paste. Cook for 6-7 minutes on 90 degrees, speed 4.

    Dust the plum bake with icing sugar, then slice and serve with warm chocolate custard. (Can be served cold).

Tip

This is a really delicious recipe by Valli Little that I have converted for Thermomix and done some tweaking with the custard. It is devine both hot or cold!!

    Lovely! My sister cooked this for me the other day, she subbed out SR flour for GF Plain flour with 2 tsps of baking powder and it worked beautifully. We didn't have the custard and the cream cheese portion tastes like white chocolate. Will be making again!

    This was really beautiful.  Did not make the white choc custard to go on top just put icing sugar once cooled.  It was a big hit have made several times love it.

    I've got this recipe in the march delicious magazine. I notice it says to use the whole egg, whereas you have just said to use the yolks. I'm just wondering if this is a typo or if you purposely left the whites out?
