Ingredients

Zesty coating

  • zest of 1 lime
  • zest of 1 lemon
  • 40 grams Shredded coconut

Ball mixture

  • zest of 1 lime
  • zest of 1 lemon
  • 40 grams Shredded coconut
  • 10 fresh medjool dates, pitted
  • 30 grams lime juice, freshly squeezed
  • 30 grams lemon juice, freshly squeezed
  • 40 grams puffed brown rice, (or other puffed grain/cereal)

Recipe's preparation

    For Zesty Coating
  1. Add lime zest, lemon zest and shredded coconut to dry TM bowl and grate for 6 secs/sp7.

     

    Set aside as coating mixture for rolling balls in.

     

    No need to clean bowl, continue on to ball mixture.

  2. For Ball Mixture
  3. Add second lot of lime zest, lemon zest and shredded coconut to TM bowl and grate 6 secs/sp7. Scrape down sides of bowl.

     

    Add dates, lime juice and lemon juice to TM bowl and combine for 10 secs/sp7. Scrape down sides of bowl. Combine for a few more secs on sp 7 if required.

     

    Add the puffed brown rice (or other puffed grain/cereal) to mixture in TM bowl and combine 10 secs/Counter-clockwise operation"Counter-clockwise operation" /sp 5. Scrape down sides of bowl. Combine for a further 5-10 secs/Counter-clockwise operation"Counter-clockwise operation" /sp 5 if required until well mixed.

     

    With wet hands, roll mixture into balls, using about 1 Tblspn worth of mixture for each ball.

     

    Then roll each ball in the zesty coconut coating until well covered.

     

    Chill balls in fridge or freezer, can also be stored in fridge or freezer to keep them firm.

Tip

This recipe is nut-free, perfect for kids lunchboxes.

 

To make gluten free variations of this recipe try using puffed buckwheat or puffed amaranth in place of the puffed brown rice, both available at health food stores.

 

Try using any citrus zest for a different flavour ... all lemon, all lime, orange or mandarin zest.
