- 4 egg yolks
- 60 gram golden syrup
- 1 teaspoon vanilla extract
- 20 gram treacle
- 600 thick cream

place raisins and rum into bowl and bring to the boil for 2 min|100|reverse|speed 2. set them aside to cool and wash bowl.
place egg yolks, golden syrup, vanilla extract and treacle in bowl and mix for 5 min|speed 4 - or until thick..add cream and beat for 2 min|speed 4. Place in a plastic container and pop in freezer for 2 hours. Fold through rum and raisins until well combined, then freeze until firm.

Hubby really liked the taste of it, and he is fussy. I waited the 2 hours to mix the raison mix but it still sunk to the bottom. Will play around with that next time but as I poured it all in a shallow dish I can scoop out and get the raisons in every portion.
Are you meant to cook this ice cream base?? I want to make it to take to a cancer day for Friday to go with sticky date puddings
