Rhubarb Cordial
- 700 g Rhubarb stems, washed and chopped
- 400 g raw sugar
- 500 g water
- 1 lemon, Juiced

After washing and chopping the stems of the Rhubarb place them into the thermomix bowl.
Add the sugar, water and lemon juice.
Cook for 30mins, 100 degrees, Speed 2. Place the sieve on top instead of the measuring cup.
Once the 30mins is up, strain the mixture through a sieve and pour into a sterilised glass bottle. This should keep in the fridge for a few weeks
Serve to taste with either still or sparkling water and ice.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Yummy, I halved the amount of sugar and used an orange instead of lemon. It was not to sweet. I turned down the speed as I had overflow even though I still had the basket on.

easy to do, and very good idea when you have lots of rhubarbe from the garden and do not know what to do with it. good for kids too
