Ingredients

Chilli Mussels

  • 1500 grams cleaned mussels
  • 1 onion, peeled & halved
  • 3 cloves garlic, peeled
  • 1 Large red chilli, seed in, chopped into thirds
  • 1 big handful of basil, parsley and oregano
  • 50 grams olive oil
  • 1 tomato paste
  • 2 cans crushed or chopped tomatoes
  • 200 grams white wine

Recipe's preparation

    Chilli mussels
  1. Place garlic and chilli in TM and mince on speed 10 for 5 seconds. Add onion and chop for 3 seconds speed 6. 

    Scrape down bowl and add oil. Saute on 100 reverse for 5 minutes. 

    Meanwhile chop basil, oragano and parsley roughly by hand. When sauting is done, add the herbs, tomatoe paste, tinned tomatoes and wine to the TM bowl. Cook for 10 minutes at 100 degress on speed 2. 

    Place the mussels in the varoma and place on top of the bowl. Continue cooking at 100 degrees, speed 2, for 15 minutes. When done, place the mussels and the sauce in a large bowl to mix together.

    Place in large bowls for serving. 

    I added another finly chopped chilli or 2 on top of the served bowls for adults. The heat as above was fine for my 6 and 7 year old boys. I also added some chopped parsly as a garnish on top.

    I served this with previously made TM foccacia.

    Yummo!! I just used dried herbs & 1/2tsp of chilli paste but the heat was very mild. Add a teaspoon next time.

    Great recipe. I used a little more garlic than stated here, 1 and a half birds eye chillies, instead of longer chillies and only 1kg of mussels, because of some of the above comments; it was plenty.

    My partner and I had a bad run of buying some not so great red wine over the weekend, which we couldn't bring ourselves to drink, so used some of that instead of white wine and the sauce tasted GREAT!

    Will definitely come back use this recipe again in the future!
