Ingredients

  • 6 red chillies seeds in
  • 2 corriander roots and stems
  • 1 piece lemongrass
  • 1 garlic clove
  • 1/4 cup thai basil
  • splash sesame oil
  • i litre chicken stock
  • 1 tablespoon soy sauce 20g
  • 1 tablespoon oyster sauce
  • 2 tablespoon fish sauce 35g
  • 1 tablespoon sweet soy sauce (ABC Kecap Manis)
  • juice of 2-3 limes
  • 5 grams palm sugar
  • 1 tablespoon Sweet chilli sauce
  • 500 grams trimmed chicken breast or thigh
  • 3 spring onions - chopped
  • 2 small bok choy chopped -most of white discarded
  • thin rice noodles
  • bean sprouts
  • Cup Fresh Corriander
  • mint leaves
  • extra chopped chilli
  • fried shallots, to garnish

Recipe's preparation

  1. put all first five ingedients in TM bowl and zap for five seconds. Scrape down. Add oil and varoma temp 1 min speed 1.

    add from stock to sweet chilli sauce. Varoma 4 minutes speed 1.

    Add chicken. 100 degrees reverse speed soft 6 minutes.

    Add spring onions and bok choy 100 degrees reverse speed soft 6 minutes.

    Meanwhile cook noodles.

     

    Serve soup over noodles and garnish with the last 5 ingerdients.

    Delicious.... Cooked for a bit longer at different stages and delicious. Would consider deseeding half the chillis next time.

    I've just tasted it, and it is hot. My kids (10, 8, 4 & 2) won't eat it this hot so next time I'll reduce my chilli quantities. I added 3 large chillies.

    Amazing! It was a bit too hot, so will reduce the chili amount, but still my 3, 5, 7 yr olds lapped it up, they kept saying "my mouth is burning, my mouth is burning!" but kept on eating it lol  Love  tmrc_emoticons.p

    I made this again last night but used beef stock and a Massel beef cube with water and left out the sweet chilli sauce as the 5 chillies I added at the start were very strong. I also added chilli fried tofu and prawns as well as the chicken. It was fabulous!

    It is quite hot but as you can see my seven and nine year old boys are demolishing it. They are familiar with a bit of heat though, and did get through big glasses of milk each pretty quickly. Maybe use less to start with then just add crushed chilli from a jar or finely chopped fress chillies directly to your bowl as you taste it. You might also want to leave the seeds out too.

    Sorry dont know what the other photo is??? But the other one is of my boys loving Mum's spicy noodle soup. Glass of milk all gone though. Finn (9) asked if he could have it for his school lunch tomorrow!
