Ingredients

  • 415 grams salmon, canned with juice/brine
  • bunch fresh spinach or chard (stalks removed and roughly chopped)
  • 3 eggs
  • corn kernels (either fresh from 1 cob or 1 small tin drained)
  • 1 heaped tablespoon lemon juice
  • 1 piece bread crumbled (I use gluten free bread)
  • 50 grams Parmesan cheese
  • 1 tomato
  • pepper to taste

Recipe's preparation

  1. place parmesan in TM and grate at speed 4

     

  2. add washed and well drained spinach/chard, canned salmon with juice/brine, eggs, lemon juice, corn kernels, bread crumbs, pepper to taste and mix on speed 3-4 for 15 sec (don't over mix).

  3. use spatula to spoon mixture into a greased and lined baking tin and then garnish with sliced tomato on top.

  4. bake for 45-50 minutes until golden and firm in a moderate oven

Tip

You can omit the parmesan cheese if you would like it to be dairy free.

If you don't have any bread or gluten free bread you can use 1/3 cup cooked rice instead.

    Cooked this loaf tonight. We loved it. Took a bit longer in the oven than anticipated.  I crumbed the bread at speed 7. Otherwise, followed recipe and had a great result.
