Ingredients
Seafood Salad
- 1000 g mixed seafood including salmon fillet, prawns, scallops and other white fish fillet of choice, chopped into even sized 3cm pieces
- 1/2 red onion, sliced
- 2 Avocados, stone removed and sliced
- fresh baby spinach or salad greens of choice
Chilli Citrus Dressing
- 2 oranges, zest and juice
- 1 lemon, zest and juice
- 5 sprigs coriander leaves
- 3 sprigs Italian flat leaf parlsey
- 4 spring onions
- 1 green chilli
- 2 tbsp Sweet chilli sauce
- 50 g fish sauce
- 150 g olive oil
- 1 dash rice wine vinegar
- freshly ground black pepper & sea salt, to taste
- raw sugar, to taste

Place citrus zest into clean and dry TM bowl and grate 10-20secs/speed 8. Add herbs and chilli and chop 5-10secs/speed 7.
Add all remaining ingredients and set dial to closed lid position and pulse mixture 2-3 times on Turbo. (Don't overmix or you will get an emulsion rather than a dressing.)
Divide seafood between Varoma dish and tray. Add 800g water into mixing bowl, place Varoma into position and cook 20-25mins/Varoma/speed 1 or until cooked.
To prepare salad arrange plate with salad greens, sliced onion and avocado. Add steamed seafood and drizzle with dressing.

Zest is a bit overpowering in dressing. Dont use pith.
Lovely seafood salad. We made with a mix of atlantic salmon, flathead, scallops and green prawn meat. There seemed to be a lot of dressing however we used most of it on the dish. We added a kaffir lime leaf to the dressing. We may add a mango to the salad next time. Thank you for the recipe.
Mmmm this sounds delish, I think I will try this out at Christmas.
