Ingredients
Steamed Salmon
- 4 pieces skinless salmon fillets, (approx 150g each)
- Zest & juice of 1 lime
- 2 cm piece of peeled fresh ginger
- 1 clove garlic
- Small bunch of coriander (about 3 stems)
- 1 small shallot (white part only)
- 900 g water
- salt
- 300 g jasmine rice, washed
- assortment of vegetables for steaming
- 1 tablespoon soy sauce (or tamari)
- 1 tablespoon dry sherry

I'm cooking this todayRecipe's preparation
Place lime zest into TM bowl and pulverize for 20 secs at speed 8.
Add ginger, garlic, coriander and shallot and chop for 3 secs on speed 7.
Add lime juice and mix for 5 secs, speed 6. This will create a coarse paste.
Remove from the TM bowl and set aside. Do not wash the TM bowlAdd 900ml water to TM bowl and salt to season.
Place steamer basket with washed rice into TM bowl.
Set Varoma dish in place and fill with vegetables of your choice.
Remember not to overfill so that steam can pass through Varoma.
Place salmon fillets on Varoma tray. Season with salt & pepper to taste.
Press approximately 2 tsp of the paste onto each fillet.
Set timer for 15 mins, Varoma, speed 4.When timer is finished, check that the salmon is cooked to your liking.
Serve salmon, vegetables and rice or place in Thermoserver to keep warm.
Pour out cooking liquid until there is only enough to cover the bottom blade of TM bowl.
Add soy sauce & sherry to liquid and cook for 2 mins, 90 degrees, speed 3.
Serve sauce as an accompaniment to the fish, rice & vegetables.
