Ingredients

Asian Dressing

  • 1 bunch coriander
  • 1 spring onion, (shallot)
  • 1 clove garlic
  • 1 knob ginger
  • Zest 1 lime
  • juice 1 lime
  • 30 g oil, (peanut or sesame)
  • 20 g soy sauce

Fish Fillets

  • 4 fillets fish
  • Large bunch baby Bok Choy
  • mixed vegetables, (capsicum, carrot, snow peas)
  • 200 g basmati rice, thoroughly rinsed
  • 900 g water

Recipe's preparation

    Asian Dressing
  1. Place lime zest, ginger, spring onion and garlic into mixing bowl and chop 5 sec/speed 7. Scrape down sides of bowl.

  2. Add coriander (reserving some for garnish) and salt and chop 8 sec/speed 6. Scrape down sides of bowl.

  3. Add oil and soy sauce and stir 15 sec/speed 4 to combine.

    Whilst stirring, squeeze lime juice onto lid using spatula to compress the lime.

  4. Fish Fillets
  5. On-top of bench or flat surface, place baking paper on top of aluminium foil.

  6. Place several leaves of Bok Choy onto paper and top with fish fillet.

  7. Spread dressing over fillet and arrange vegetables on top and around fish.

  8. Pull up sides of aluminium foil to make bowl shape surrounding the fillet.

  9. Place water into mixing bowl and rice into simmering basket.

    Set Varoma in place.

  10. Position fillets inside Varoma dish and steam 16 min/Varoma temp/speed 4.

Tip

Fish fillets can be substituted with chicken tenderloins.

    tmrc_emoticons.(Disappointing, even the bok choi was not cooked! The rice was perfect, the sauce seemed to have good ingredients but as for steaming fish and vegetables in foil and paper (and I only had one layer of both) not possible. I up-ended the lot and placed it in a fry pan with a foil lid! After working till 6.30pm I was not impressed to have to wait ages for my dinner. 

    Has potential if it is rewritten, as I had to make lots of insertions into the recipe. Thermomix user for 2 months only but housewife/cook for 41 years..

    I had a go at this last night. I used salmon steaks and must say they turned out a treat. I did have to increase the steaming time by another 10 minutes but found this to be a great recipe.

    Made this for dinner tonight and it was delicious! The only problem was that after 16 mins my fish was still completely raw so I ended up taking it out of the baking paper and foil and placing it directly in the Varoma dish for another 12 or so minutes after which it was perfect - my husband almost licked the plate clean! Wondering what I did wrong - maybe it was too wrapped up to begin with? I had the top covered and reading the recipe again I am now wondering if I should I have left it open and just had foil around the sides? Anyway, will definitely make this again!
