Ingredients
Baba Ganoush Chicken
- 1000 g chicken breast fillet, cut in half lengtthwise
- 1 eggplant, approx 550g
- 1/2 bunches parsley, stems cut off
- 2 cloves garlic, peeled
- 1 onion, peeled and cut in half
- 100 g tahini
- 1/8 level tsp Kashmiri chilli
- 1 heaped tsp sweet paprika
- 1 heaped tsp smoked paprika
- 60 g lemon juice
- to taste ground black pepper
- 1 level tsp salt
- 2 heaped tsp veg/chicken stock paste
- 100 g white wine
- 100 g water

- Place chicken into a large bowl and set aside
- Pierce the eggplant all over with a metal skewer 10-15 times
Using tongs char the eggplant over an open gas flame until soft (this will take approx 10 mins)
Set aside until cool enough to handle
Cut in half lengthwise and scoop out the pulp
Discard the black skin - Add to bowl "Closed lid"

Blend 4sec/spd5 MC on - Pour marinade over chicken and stir to combine using spatula

add chicken and all the marinade
Cook 30min/100°/ "Counter-clockwise operation" /spd1 - Pour into thermosever and rest for 10 mins prior to serving
