Ingredients
Chicken cashew and coconut curry
- 130 g raw unsalted cashew nuts
- 2 teaspoons coriander seeds
- 2 teaspoons cumin seeds
- 1/2 teaspoon turmeric
- 1 stick cinnamon broken in half
- 1 pinch chilli flakes
- 1 onion peeled and halved
- 2 cloves garlic
- 30 g oil - vegetable or peanut
- 750 g chicken thigh, cut into 3cm chunks
- 200 g coconut milk
- 100 g water
- 1 Lemon - juice and rind
- 80 g baby spinach

Roast cashew nuts for 5 mins varoma temp, reverse, speed 1
Add cumin, coriander, turmeric, cinnamon and chilli flakes and cook for 2 minutes, varoma temperature, reverse, speed 1
Mill 2 minutes on speed 9. Set aside
Place onion and garlic in TM bowl and chop for 3 – 5 seconds on speed 6
Scrap down sides of bowl and add oil and cook for 3 minutes, 100 degrees speed 1
Add chicken, cashew and spice mix, coconut milk and water. Cook for 20 minutes 100 degrees, reverse, speed soft
Add lemon juice and spinach and cook for 3 minutes, 100 degrees, reverse, speed
Place in thermo server while you cook some rice to accompany it

Made this tonight and hubby & both kids enjoyed it & have asked me to keep making it. Added a good teaspoon of salt & some pepper and used only 1 tablespoon lemon - I wish now I added more lemon. I personally found it 'nice' but bland and lacking - none of the flavours really came through enough for me. I love my spices. I'll be making it again for sure but will play around with some more spices.
Really delish and easy! I noticed there was no salt in the recipe so I added a good tablespoon of chicken stock paste and found the flavours were even better after a taste with a wee squeeze of lemon juice. Next time I'll throw in some veg, but this made a lovely, rich flavoursome sauce with pantry staples. What a winner!
Oh and I omitted chilli for the little people in my house.
Made this yesterday, I didn't mind it, hubs and the kids needed convincing. did omit the lemon based on some other comments about it being overpowering, maybe it needed a bit. It was nice overall but prob wouldn't make it again.

A great dish, my 8yo cooked this tonight (with a little help) and it's a winner 4 kids, myself and my partner gobbled it up and asked for more! The only amendments I made were 1 tsp salt when adding the spices and omitting the dried chilli. Instead I added one fresh chilli with the onion and garlic. Made 1 1/2 quantities so needed to cook it for 30minutes. This will be making an appearance on the menu again.
What a lovely dish this is. Simple quantity of incredients, quick to make so easy to eat. Served it with left over coconut milk in rice. Congrats will be doing this again I know.
