Ingredients
20g olive oil
- 20 g olive oil
- 1000 g chicken thigh fillet
- 1 onion
- 1 leeks, chopped
- 1 clove garlic
- 350 g Mushrooms sliced
- 1/2 teaspoon dried tarragon
- 350 g water
- 1-2 tablespoon stock, (I used veg stock)
- 150 g cream
- 1 lemon, zest and juice
- 2 teaspoons Dijon mustard
- 20 g Butter

Zest lemon in TM if not using a microplane and set aside.
Put 20g olive oil in TM and heat 1min/Varoma/. Quarter chicken thigh fillets and in two batches cook in TM 3mins/Varoma//. Use slotted spoon to remove chicken and set aside.
Add onion and garlic clove chop 2sec/speed 7.
Add chopped leek 3sec/speed 5. I think it's nice to see some textured leek.
Add butter and saute for 6 minutes/varoma//. While this is cooking slice mushrooms and add through the lid.
Add water, stock, lemon juice and zest, tarragon, dijon, cream. Cook 3 mins/varoma/
Add chicken and season cook 30 mins/100C/.
Cook with basket on top to allow some evaporation. Sauce will reduce and thicken when done.
Tip
This is an excellent births, deaths and funeral meal. It freezes really well and actually tastes better the next day. Serve with rice or potatoes (which you could steam in the varoma while cooking casserole). If it's summer serve with green tossed salad and crusty bread.

This is a seriously good recipe but leave the water out! Way too runny otherwise. Easy meal, freezes well or refrigerates if you want it again the next day. There's only my wife and I so it easily makes three meals for us. Highly recommended!

this was my first meal in my Thermomix, absolutely loved it And was so easy to make.
Delicious sauce, the hint of lemon is really nice. I added a bit or cornflour & water paste to thicken a bit more.
I tried cooking veggies in the Varoma on top but they were'nt cooked enough, do you think I could have cooked it on Varoma teperature? I didn't want to burn it though.
I had so much sauce left over that I saved it and 2 nights later I added mixed veggies, cooked some pasta and voila, another dinner.... winning.

I didnt put any water in as there was alot of water from sealing the chicken and added a full Tsp of tarragon.
