Ingredients

Batter

  • 250 g cold water
  • 150 g Self Raising Flour
  • 1 egg
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Honey Sauce

  • 1 tablespoon oil, light tasting
  • 1/2 cup honey
  • sesame seeds, to garnish

Chicken

  • 500 g chicken breast, cubed
  • 1/2 cup Cornflour, to coat chicken

Recipe's preparation

    Method
  1. This recipe takes time to prepare but is worth it. If you plan to have it with fried rice make that the day before, the flavour develops over night.


    This can also be made Gluten Free by substituting with GF flour

    1. Dice the chicken breast into cubes - not too large as the batter will burn before the chicken is cooked.

    2. Add the water and egg to the mixing bowl and mix 10 sec speed 5.

    3. Add the flour, salt & pepper to the mixing bowl and mix 30sec, speed 5 until smooth.

    4. Pour batter into a large bowl and set aside.

    5. Add oil to a large pan, deep enough to shallow fry or preheat deep fryer to 180c.

    6. Coat a few pieces of the chicken in corn flour, then dip into the batter and place straight into hot oil.

    7. Place a few pieces in at a time. Don't overcrowd the pan or the temperature of the oil will drop.

    8. Turn the chicken until golden brown and cooked. Test a piece to ensure it's cooked through.

    9. Place chicken onto a wire rack to drain off excess oil. Put into 150c oven to keep hot.

    10. Once you have fried all the chicken, remove from the oven and have it next to you while you make the honey sauce as you need to work quickly.

    11. Place honey and oil into a large pan on a medium heat and gently simmer, stirring. Once it bubbles, put the chicken in to the fry pan and gently mix so the chicken gets coated in honey sauce. Don't be to rough or the batter will come off.

    12. Once all coated sprinkle with sesame seeds and serve with fried rice. Enjoy!

Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
