Ingredients

Balls

  • 500 g chicken thigh, cut into pieces
  • 3 zucchini, small
  • 1 carrot
  • 1 onion, quartered
  • 1/2 bunch corriander
  • 2 clove garlic
  • 1 egg
  • 1 tbsp Veg Stock Paste, from EDC
  • 3/4 tsp cumin
  • 1 slice bread

Recipe's preparation

    Method
  1. Put approx 100g chicken into bowl and

    mince on speed 5,  5 seconds, set aside.

    Repeat in 100g lots for the remaining chicken speed , 5 seconds, set aside.

     

    Pre-heat oven to 180

     

    Grate zucchini, carrot, onion, corriander, garlic and bread

    speed 8, 4 seconds, repeat if you want a finer consistency

     

    Add minced chicken back in and add stock paste, egg and cumin and mix speed 4Counter-clockwise operation"Counter-clockwise operation" 15 seconds

     

    NOTE: THIS MIXTURE WILL BE QUITE WET

     

    Use a small scoop or heaped tablespoon to make into ball shape. Set onto baking tray lined with baking paper and cook for 25 mins or until cooked through. 

     

    If using for meatballs for pasta or finger foods shape tablespoons of mixure into balls.

     

    If using for nuggets for kids' lunchboxes, snacks, or meal, use dessert spoon of mixute and shape into rolls/fingers/nuggets as your kids prefer.

     

    Place on lined baking tray and cook for 20 minutes.

    Drain or soak up liquid produced by cooking and return to oven for a further 10 - 15 minutes or until cooked through and golden brown.

     

     

Tip

My kids love these as chicken nuggets for a snack, lunchboxes, or with mash and veg for dinner.

They also work beautifully when heated in a tomato passata  and served with pasta for a hearty family meal.

I use fresh chicken for mincing as these freeze well for later.

    How did you go with the finished recipe? I definitely didn't need to add anything to make the mixture spoonable - but yes, it is  wet mixture, I think that's why the meatballs end up staying moist?

    the mixture is extremely wet, totally unable to be rolled -it's more of a soup! I had to add nearly a cup of flour just to be able to spoon it out. Not impressed at all. Will see how they taste when it comes out of the oven. Maybe the zucchini shouldn't be chopped so fine and the juice squeezed out of it.
